Basmati rice: 500g
Onions: 3 medium / 300g
Tomatoes: 3–4 medium / 300g
Garlic paste: 2 tbsp
Plain yogurt: 1 cup / 250g
Cooking oil: 1 cup / 180g
Potatoes: 2 medium / 250g
Ginger paste: 2 tbsp
Zauq Bahar Special Biryani Masala: 1 packet
1. Heat the oil and fry the onions until golden. Add the meat and Zauq Bahar Special Biryani Masala, then stir-fry for 5 minutes. Add the yogurt and water — 4 cups for beef or lamb, or 2 cups for chicken. Cover and cook on low heat until the meat is tender. Add the tomatoes and stir-fry on high heat until the oil separates, then set aside.
2. Separately, add the soaked rice and 3 tbsp salt to 15 cups / 3 litres boiling water. Boil until the rice is ¾ cooked, then drain thoroughly. Spread half the rice in a pot and pour over the meat curry.
3. Top with the remaining rice. Add a pinch of yellow food colour if desired, and spread fresh coriander and mint over the rice. Cover and cook on low heat until the rice is tender, about 5–10 minutes. Mix before serving.
